Lemon Berry French Toast Casserole

Ingredients

French Toast

  • 1 stick butter
  • 2/3 cup granulated sugar
  • 2 Tbsp. corn syrup
  • 1 Tbsp. lemon juice
  • 8 oz. Simple Truth cream cheese, softened
  • 1/2 cup lemon curd
  • 10 slices bread
  • 6 Simple Truth eggs
  • 1 cup Simple Truth milk
  • 1 cup half & half

Berry Sauce

  • 1 cup strawberries, quartered
  • 1 cup raspberries
  • 1/4 cup granulated sugar
  • 1/4 cup orange juice
  • 2 Tbsp. lemon juice

Instructions

French Toast

  • In a small saucepan, combine 1 stick butter, 2/3 c. sugar, 2 Tbsp. corn syrup, and 1 Tbsp. lemon juice. 
  • Heat, stirring, until butter is completely melted. Pour mixture into greased 9x13 inch pan.
  • In a small mixing bowl, combine cream cheese and lemon curd and mix until smooth and creamy.
  • Spread mixture evenly over 5 pieces of bread; top each with another piece of bread and place in a single layer in the pan. (*Cut bread as necessary to fit)
  • In a separate mixing bowl, combine eggs, milk, and half & half. Whisk until smooth. Pour mixture over bread in pan.
  • Cover and refrigerate overnight (optional) or bake at 350° for 50-60 minutes.
  • Remove from oven; dust with powdered sugar and top with fresh berries. Drizzle with berry sauce as desired.

Berry Sauce

  • Combine all ingredients in a medium saucepan. Heat on medium heat, stirring often, for 5 minutes.
  • Use an immersion blender or transfer mixture to a separate blender or food processor. Blend until smooth.
  • Serve warm over French Toast Casserole.
