Ingredients

  • 1 tsp. unflavored gelatin
  • 1 Tbsp. cold water
  • 2 Tbsp. boiling water
  • 1/2 cup granulated sugar
  • 2 Tbsp. fresh lemon juice
  • 1 tsp. lemon extract
  • 1 cup heavy cream *very cold

Instructions

  • Sprinkle gelatin over cold water in small bowl; stir and let stand 1 minute to soften.
  • Add boiling water; stir until gelatin is completely dissolved. Mixture will be clear.
  • In a large cold mixing bowl, combine granulated sugar, lemon juice, lemon extract, and heavy cream.
  • Beat at medium speed until stiff peaks form; pour in gelatin mixture and beat until well blended.
  • Spoon or pipe into individual serving dishes.
  • Cover loosely and chill 1 hour or until ready to serve.
  • Garnish with fresh berries and/or whipped cream as desired.
