Skinny Enchilada Tostadas

Ingredients

Enchilada Tostadas

  • 4 8 inch flour tortillas
  • 3 c. shredded rotisserie chicken
  • 1/2 c. enchilada sauce
  • 1/2 c. shredded cheese
  • sliced jalapenos
  • chopped fresh cilantro

Avocado Crema

  • 1 avocado mashed
  • 1/2 c. plain Greek yogurt
  • 1/2 tsp. kosher salt
  • 1 tsp. lime juice
  • 1/4 c. fresh cilantro chopped
  • 2 Tbsp. onion minced

Instructions

  1. Assemble tostadas by topping each tortilla with 3/4 c. shredded chicken, 2 Tbsp. enchilada sauce, and 2 Tbsp. shredded cheese.
  2. Bake at 350 degrees for 10 minutes.

  4. Combine all ingredients in a small mixing bowl and mix until well-blended.
