Ingredients
Chopped Italian Salad

6 oz bag butter lettuce or mixed greens, chopped

cooked chicken breast
chopped
1/2
c.
chopped grape tomatoes
1/2
c.
chopped cucumbers
1/2
c.
chopped yellow pepper
1/2
c.
chopped orange pepper
1/2
c.
chopped pecans
1/2
c.
Gorgonzola cheese

avocado
chopped
2
pcs. bacon
cooked & crumbled
For the Dressing:
1/3
c.
olive oil
1/3
c.
white wine vinegar

Tbsp.
grated Parmesan cheese

tsp.
sugar

tsp.
dried basil
1
tsp.
dried oregano

garlic cloves
minced

tsp.
onion powder
1/4
tsp.
dried mustard
Peachy Cobb Salad

5 oz bag mixed greens
1-2
peaches
chopped

pieces
bacon
cooked & crumbled

chicken
cooked & chopped

chopped grape tomatoes

crumbled goat cheese

red onion
minced
For the dressing:
1/2
c.
bbq sauce
I used Sweet Baby Ray's
1/2
c.
balsamic vinegar
Instructions
Chopped Salad
Combine all ingredients in a large bowl and toss to distribute.
Combine dressing ingredients in a small jar; shake well, pour over salad and enjoy!
Peachy Cobb Salad
Divide mixed greens evenly among 2-4 salad bowls.
Top with remaining ingredients, divided accordingly, as pictured.
Drizzle with dressing and enjoy!
