Ingredients

cornbread croutons
cornbread pieces toasted in 350 degree oven 10 min. on each side
3 to
matoes
cut into 1 inch pieces

green pepper
cut into 1 inch pieces
2
ears corn
grilled and removed from cob
1
bbq marinated chicken breast
grilled and cut into 1 inch pieces

avocado
cut into 1 inch pieces

c.
red onion
cut into 1 inch pieces
1/2
c.
black beans
drained and rinsed
1/2
c.
cilantro
chopped
For dressing:

c.
olive oil

Tbsp.
lemon juice

Tbsp.
lime juice
2
Tbsp.
cilantro
minced

tsp.
cumin
1
tsp.
coriander
1
tsp.
chili powder

tsp.
salt

tsp.
cayenne pepper
Instructions
Combine all salad ingredients in a large bowl.
Combine dressing ingredients and mix well; pour desired amount over salad.
Serve immediately.
