Southwest Bread Salad

Ingredients

  • 4 c. cornbread croutons cornbread pieces toasted in 350 degree oven 10 min. on each side
  • 3 to matoes cut into 1 inch pieces
  • 1 green pepper cut into 1 inch pieces
  • 2 ears corn grilled and removed from cob
  • 1 bbq marinated chicken breast grilled and cut into 1 inch pieces
  • 1 avocado cut into 1 inch pieces
  • 1/2 c. red onion cut into 1 inch pieces
  • 1/2 c. black beans drained and rinsed
  • 1/2 c. cilantro chopped
  • For dressing:
  • 3/4 c. olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. lime juice
  • 2 Tbsp. cilantro minced
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper

Instructions

  • Combine all salad ingredients in a large bowl.
  • Combine dressing ingredients and mix well; pour desired amount over salad.
  • Serve immediately.
