Ingredients
1small red onionthinly sliced
2medium yellow squashthinly sliced
3bell peppersthinly sliced (I used a combination of green, yellow & red)
8oz.fresh mushroomssliced
2garlic clovesminced
2Tbsp.olive oil
12oz.baconcooked and crumbled
8large eggs
1/4c.half & half
1tsp.salt
1tsp.pepper
8oz.shredded mozzarella or Italian-blend cheese
8oz.cream cheesecubed
2 1/2c.dry French bread cubes
Instructions
Saute vegetables and garlic in olive oil over medium-high heat 15 minutes or until tender-crisp.
Whisk eggs, half & half, salt, and pepper until blended.
Stir in cooked, crumbled bacon, mozzarella cheese, cream cheese, and bread cubes.
