Cajun Potato Salad

This Cajun Potato Salad is flavor-packed and delicious! The best twist on a classic summer salad....with a kick!

  • 3 lbs. red potatoes
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 6-8 green onions sliced
  • 1/2 c. fresh minced parsley
  • 1 c. mayo
  • 1/4 c. half & half
  • 2 Tbsp. cajun seasoning
  • 2 large Phil's Fresh Eggs hard boiled and sliced


  1. Place potatoes in a large pot; cover with water and bring to a boil.
  2. Boil 15-20 minutes or until tender. Drain and set aside to cool.
  3. Once cool, cut potatoes into 1 1/2 inch pieces.
  4. In a large bowl, combine potatoes, peppers, onions, and fresh parsley.
  5. In a separate small bowl, mix mayo, half & half, and cajun seasoning.
  6. Pour mayo mixture over potato mixture and stir until evenly combined.
  7. Top with sliced Phil's Fresh Eggs; sprinkle with additional cajun seasoning and fresh parsley as desired.
