Sheet Pan Greek Chicken

This Sheet Pan Greek Chicken has ALL the best flavors! Loaded with chicken, veggies, kalamata olives, and Greek seasonings, this delicious one pan dinner comes together quickly and feeds a family!

Ingredients

  • 1 lb. raw chicken breast cubed
  • 2 c. red potatoes cubed
  • 2 small zucchini cubed
  • 1 yellow pepper cubed
  • 1 small eggplant cubed
  • 1/2 c. pitted kalamata olives

For dressing:

  • 1/2 c. olive oil
  • 2 Tbsp. lemon juice
  • 1 Tbsp. oregano
  • 1 Tbsp. minced dried onion
  • 1 tsp. garlic
  • 1 tsp. kosher salt
  • 1/4 c. crumbled feta cheese

Instructions

  1. Preheat oven to 400 degrees.
  2. Line a large rimmed baking sheet with foil.
  3. Arrange chicken and veggies on baking sheet.
  4. Combine ingredients for dressing and whisk well; pour over chicken and veggies on baking sheet.
  5. Bake for 20-25 minutes or until potatoes are tender.
  6. Remove from oven and sprinkle with feta cheese before serving.
