Baked Portobello Mushroom Alfredo comes together quickly for an easy and delicious weeknight meal that everyone will love!

Ingredients

  • 8 oz. fettuccine cooked al dente
  • 3 c. sliced portobello mushroom caps
  • 1/2 c. diced onion
  • 1/4 c. Horizon Organic butter
  • 1 c. Horizon Organic sour cream
  • 1/2 c. Horizon Organic shredded mozzarella cheese
  • 1/2 c. shredded Parmesan cheese
  • 1/2 c. Horizon Organic half & half
  • 1/4 c. panko bread crumbs
  • 1/2 tsp. kosher salt
  • 1/4 tsp. pepper

Instructions

  • Melt butter in a large skillet. Add mushrooms and onions and saute over medium heat 5 minutes.
  • In a separate large mixing bowl, combine sour cream, cheeses, half and half, and salt & pepper.
  • Add cooked noodles, mushrooms, and onions.
  • Stir to combine.
  • Spoon mixture into a 1.5 qt. or 8x8 inch baking dish.
  • Top with bread crumbs.
  • Bake, uncovered, at 350 degrees for 20-30 minutes.
