Ingredients

  • 1 15 oz. can black beans, drained and rinsed
  • 1 jalapeno pepper seeded and minced
  • 1/2 c. diced red onion
  • 1/2 c. diced yellow pepper
  • 1/2 c. chopped grape tomatoes
  • 1/2 c. chopped fresh cilantro
  • juice of 1 lime
  • 1 Tbsp. olive oil
  • 1/2 tsp. kosher salt

Instructions

  1. Combine all ingredients and mix.
  2. Serve with tortilla chips or on top of chicken, fish, or tacos.
