Quick & Easy Quinoa Taco Soup

Ingredients

  • 2 14.5 oz. cans chicken broth
  • 1 15 oz. can diced tomatoes
  • 1 15 oz. can pinto beans, undrained
  • 1 15 oz. can black beans, undrained
  • 1 15 oz. can refried beans
  • 1 15 oz. can sweet corn, undrained
  • 1 8 oz. can diced green chiles
  • 1 package taco seasoning
  • 1 c. uncooked quinoa

Instructions

  • Combine all ingredients in a large soup pot; stir.
  • Bring to a boil; reduce heat to simmer and cover.
  • Simmer 20-30 minutes or until quinoa is cooked.
  • *Quinoa will expand during cooking and is soft and translucent when cooked through.
