Red, White & Blue Berry Quinoa Salad

Ingredients

  • 2 c. cooked quinoa
  • 1 c. strawberries quartered
  • 1/2 c. blueberries
  • 4 oz. feta crumbled
  • For dressing:
  • 1/4 c. lemon juice
  • 2 Tbsp. white wine vinegar
  • 2 tsp. honey
  • 1 tsp. fresh ground pepper

Instructions

  • Whisk dressing ingredients together in a small bowl.
  • Combine salad ingredients in a medium bowl; add dressing and stir gently until mixed.
