Grilled Summer Vegetable Salad

Ingredients

  • 4 c. mixed greens
  • 1 c. zucchini grilled and chopped
  • 1 c. grilled corn off the cobb
  • 1 c. red pepper grilled and chopped
  • 1/2 c. blue cheese
  • For the dressing:
  • 2 Tbsp. prepared pesto
  • 2 Tbsp. white wine vinegar
  • 2 Tbsp. water
  • 1 Tbsp. olive oil

Instructions

  1. Prepare salad by layering vegetables on top of greens.
  2. Top with blue cheese.
  3. Prepare dressing by combining all ingredients in a small jar and shaking vigorously to mix.
  4. Drizzle salad with dressing and toss to combine.
