So…..it’s Monday. Cyber Monday. The Monday after Thanksgiving. The first Monday of DECEMBER! How did you spend your weekend? Ours was the most low key I can remember in a long time…..which meant plenty of time for list making. Christmas wish lists, Christmas check lists, Christmas shopping lists, and….of course….a long list of Christmas Recipes!
I’ll do it all a little at a time…but when it comes to making treats, you better believe there’s an entire day (okay, TWO) set aside! One with friends and one with family and, every now and then, a bonus one thrown in. Yep…when it comes to making treats, we don’t skimp!!
It’s a tradition I look forward to every single year….and although each day has its own feel (kids vs. no kids, friends vs. family) there are certain things I can always count on. Like the fact that the day will always take longer than expected….and someone will inevitably need to leave before the cookies have been distributed. Or the reality that there will definitely be at least one recipe fail. Or the unavoidable truth that there will be tense moments between sisters or friends. But mostly sisters. Or the end result, which is the same every year. TOO MANY COOKIES!!! (Ha – is there such a thing?)
Over the years, we’ve wavered back and forth between “bake” and “no-bake” recipes. Bake recipes take time and space in the oven, plus all the measuring and mixing and cooling time…..but no-bake recipes often involve melting and stirring and rolling into balls, plus the dipping time…..so, at the end of the day, which is better?? Well, how about both?
I headed to Pick ‘n Save, where I always know I’ll find everything I need. And, to be honest, I found almost all my ingredients in the same aisle! Score! These White Chocolate Dipped Snickerdoodles are the best of both worlds and incorporate a little bit of everything. Measuring, rolling, dipping, baking, cooling, melting, stirring, dipping (again)…..and they are SO so worth it!
White Chocolate Dipped Snickerdoodles
- 2 3/4 c. flour
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. butter softened
- 1 1/2 c. sugar
- 2 eggs lightly beaten
- 1/2 tsp. vanilla
- For sugar coating:
- 4 Tbsp. sugar
- 3 tsp. cinnamon
- 1/4 tsp. nutmeg
- 16 oz. white chocolate
- Mix flour, cream of tartar, baking soda and salt. Set aside.
- Cream butter, adding 1 1/2 c. sugar gradually.
- Add beaten eggs to butter/sugar mixture. Mix well.
- Gradually add dry ingredients.
- Chill dough at least 1 hour.
- Shape chilled dough into 1 inch balls.
- Roll in cinnamon/sugar mixture.
- Place 2 inches apart on a lightly greased cookie sheet.
- Bake at 400 degrees for 8-10 minutes or until light golden brown.
- Cool completely, then melt white chocolate and dip 1/2 of each cookie.
- Place on wax paper to harden.
Snickerdoodles are perfect for the holidays. And so is my Snickerdoodle Fudge which also makes a great gift!
