All the flavors of a Reuben sandwich in a delicious little bite! The perfect appetizer for St. Patrick’s Day or game day!
Kids. As much as I love them, there are definitely some things that are just more fun without them. Like going out to eat. Grocery shopping. Talking on the phone. Or….if you’re Jorden….watching football.
I have to admit – since I’m not a huge football fan, it’s not something I totally understand. For me, having the kids watch the game with us is no big deal! In fact, for me, it’s probably more fun with them than it is without them. But for Jorden, it’s another story.
Case in point: last weekend. The first Packer game of the season. We had cancelled plans with friends (boo) because I had some work to get done…..and Jorden was watching the game by himself. Until, that is, a gaggle of kids came in from outside and decided to watch it with him. He nearly lost his mind! Because….like I said….some things are just more fun without kids. And Packer games are definitely high on that list.
Lucky for everyone, I was there to intervene. I turned on a separate TV for the kids….in the other room….and got out some snacks and drinks. And just like that, peace was restored. In the future I will know to set it up that way from the get go. Not only the separate viewing spaces, but the snacks! Because if there’s one thing that’s true, it’s that a delicious snack can go a long way.
We’ve recently fallen in love with The Laughing Cow spreadable cheese, and we’ve been using it on everything! Our latest favorite? These Mini Reuben Bites! They have all the flavors of a reuben sandwich in one delicious little bite. The perfect way to “reinvent snacking” on game day or any day! And totally appropriate for kids….although possibly more fun without them. I’ll let you decide!
Mini Reuben Bites
Ingredients
- 8 pieces cocktail rye bread
- 1 package 8 wedges The Laughing Cow Original Swiss Cheese Spread
- 2 teaspoons stone ground mustard
- 4 slices corned beef
- 4 teaspoons sauerkraut
Instructions
- Spread 1 wedge of cheese on each piece of cocktail rye.
- Top with 1/4 teaspoon stone ground mustard, 1/2 slice corned beef (rolled), and 1/2 teaspoon sauerkraut.

My understanding is they no longer make cocktail rye bread. Do you know where to buy it?

Pepperidge Farm no longer makes it, but other brands do and many stores still carry it. If you can’t find it, I would suggest toasting some squares of sliced rye bread.

Did you try typing “cocktail bread” into a google search and seeing what comes up? Many grocery stores still carry it, just not the Pepperidge Farm brand. You could also substitute large round crackers or sliced rye bread, toasted.

Sounds so great, is there any good thought of adding a little thousand island down first or on top? I haven’t had a Rueben for quite awhile and thought there was a dressing on it. I will do your recipe for sure first. Thanks

You can definitely use Thousand Island in place of the stone ground mustard if you prefer!

I am having a Saint Patrick’s Day party and I absolutely love this idea. I am under the impression these do not need to be heated up at all. I like that, simple enough for me to make. Please correct me if I’m wrong.
