Summer is here….and along with it, swimsuit season! Which really doesn’t seem fair, considering the fact that summer was clearly made for indulging in yummy frozen treats.

I’m pretty sure my kids have begged for me to stop for ice cream every day since summer break started….and to be honest, I totally don’t blame them! Who doesn’t love a cold, creamy sweet treat on a hot summer day?

Except….swimsuit season.

So clearly….I haven’t stopped. Because we all know that if my kids are getting something, I’m getting something, too. And even though that’s exactly what I want….it’s exactly what I don’t want. You know what I mean?

Which is why I decided to perfect the art of sugar cones, where there’s no special equipment required! Just a handful of ingredients, some parchment paper, a baking sheet, and some type of cone form for rolling….and you’re good to go.

I’ll be honest….it took me a few tries to get them right. But once you get it, there’s no going back. Not only do homemade ice cream cones taste amazing (SO much better than store bought), but they’re fun to decorate, too! I dipped mine in chocolate and covered them in sprinkles, but the possibilities are really endless.

HOW DO YOU MAKE HOMEMADE SUGAR CONES?

Beat 2 egg whites over medium speed until soft peaks form.
Add in 1/2 c. sugar and mix until combined.
Add 1/2 c. flour, 4 Tbsp. melted butter, 1 Tbsp. milk, and 1 tsp. vanilla. Mix just until combined
Line a baking sheet with parchment paper; draw two 7-inch circles on paper.
Spoon 3 Tbsp. batter into the center of each circle and spread in a thin layer to cover the entire circle.
Bake at 400° for 6-7 minutes or until edges are golden brown.
Remove from oven; place cone form in the center of the circle and roll the wafer around the cone.
Press gently at the seam to seal; place seam-side down to cool. Cones will harden as they cool.

HOW DO YOU STORE HOMEMADE ICE CREAM CONES?

Cones can be stored in an airtight container. If necessary, they can be re-crisped in the oven at 400° before using.

DO YOU NEED A MACHINE TO MAKE HOMEMADE ICE CREAM CONES?

The simple answer is no! You can easily make homemade ice cream cones without a machine. All you need is a mixer, a baking sheet, some parchment paper, and a cone form for rolling. You can also make homemade ice cream cones in a skillet, just as you would make crepes. Simply pour 3 Tbsp. batter into a cold skillet, turn the heat to medium, cook 4-5 minutes on one side, flip, and cook the other side 1-2 minutes before rolling into a cone shape.
