One thing that’s true about having girls is that there are a LOT of tears. I’m not saying boys don’t cry…but I’d be willing to bet they don’t cry as much as girls. And with four of them, I never know when they’re going to start flowing!

Just the other night, Jorden and I were having a quiet night at home while the girls watched a movie at the neighbors’. I got a text that they were on their way home….and the second the door opened? Tears. Lots of tears.

On the one hand, I felt awful. It’s hard to see your kids SO upset! But as time ticked on, and it became clear that my attempts to talk through it and calm her down were NOT helping….I started to get a little desperate. Because by this point, it was waaay past her bedtime and there was no reasoning with her. So I did what any desperate mom would do: I pulled out my phone.

I found the latest pictures I had taken of Myla, the latest videos Nora had made when I didn’t realize she had my phone. (On a side note, definite blackmail material.) And just like that, she was all better. Sometimes life is like that, you know? Sometimes we make things more complicated than they really need to be. Sometimes the best answer is the simplest.

Like this 10-minute Mushroom Marsala Gnocchi. It’s literally one of the easiest dishes you will ever make, but it’s so packed with flavor, you would never guess! In fact, I’d say it could even pass as “fancy”. Perfect for date night, Meatless Monday, Lent, or anytime you’re looking for an easy and delicious dinner! And you know what? It might even work to stop the crying….just in case you can relate.

This Mushroom Marsala Gnocchi has all the flavors of chicken marsala....without the meat! Perfect for Meatless Monday or anytime you're looking for a delicious vegetarian option. And best of all, it comes together in just 10 minutes!

Ingredients

  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 6 oz. mushrooms I used button mushrooms, halved, quartered, or sliced
  • 1 green onion sliced
  • 1/4 tsp. dried marjoram
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 c. vegetable or chicken broth
  • 1/2 c. marsala cooking wine
  • 1 package 16 oz. potato gnocchi

Instructions

  1. Melt butter and olive oil in a large covered skillet over medium heat (leave uncovered at this point).
  2. Add mushrooms, sliced green onions, marjoram, salt & pepper.
  3. Saute 5 minutes, stirring occasionally.
  4. Add broth, marsala cooking wine, and gnocchi.
  5. Increase heat to high; cover and cook 3 minutes on high.
  6. Remove lid and serve immediately.

    Boys do shed their share of tears, that’s for sure! But the girls do beat the boys I know (at least in my house:). What a comforting and wonderful dish of gnocchi! So easy to put together and full of flavor!!

    Chicken broth isn’t vegetarian though 🙁 I hope veggie broth will taste as good!

      The flavor comes from the marsala, so I would imagine that veggie broth would still be delicious!

    This was delicious. It made a big hit and this is fast and easy to make. I did not have the marsala wine so I used rice vinegar instead. I’ll be making this again.

    Made this tonight and it was delicious!!!! I used vegetable broth (vegetarian here) and red onion instead of green onions since that’s what I had on hand and it was one of the best and easiest dishes I’ve had in a long while. Thanks.
